I don't like parboiled rice. It stop me from breathing when I eat it.

I don’t know much about the nutritional benefits of this rice parboiling — yes, that is what it is called — except that it protects the rice from insects in the long run. In our home, it is the usual way to prepare rice, and sunny weather is essential to make it work.
