Simply mix 2–3 different kinds of flour, add water, and feed the mix with a little water and a little flour every day. I use a mix of white bread flour, rye flour, and buckwheat flour. Make sure to cover the glass jar you place your starter with a light cloth or paper towel only, the starter needs to breathe.
